Crust
- 14 Medjool dates - pitted and soaked in warm water for 10 minutes to soften up
- 3/4 cup raw walnuts
- 3/4 cup raw unsalted almonds
- 1/4 tsp. kosher salt
Filling:
- 1 cup Farmer Cheese
- 1 tbsp. raw honey or pure maple syrup
- 1 tsp. vanilla
- pinch of kosher salt
Topping:
- 1 1/2 cups mixed fresh berries - we used strawberries, raspberries, blueberries, and blackberries
Directions
- Lightly coat a 9" springform pan with a light layer of nonstick spray or coconut oil, and then line with a piece of parchment paper. Set aside.
- To a food processor add the dates, walnuts, almonds, and salt. Pulse until the nuts mostly break down, and a soft dough begins to form.
- Transfer the mixture to the prepared pan. Lightly grease a spatula or your fingers and press into an even layer over the base of the pan. Place in the freezer for 15 minutes.
- For the filling, add Lifeway Farmer Cheese, honey or maple syrup, vanilla, and salt to a food processor and blend for a minute or two until smooth and creamy.
- Remove the pan from the freezer, release the edges, then carefully remove the parchment paper from the crust and quickly transfer to a serving plate.
- Spread the filling over the top of the crust, then decorate with fresh mixed berries. Store in the refrigerator for at least an hour before serving. This is best enjoyed the same day that it’s made!
