Ingredients
Salad
- 1 cup cooked quinoa
- 2 cups roasted brussels sprouts
- 2 cups roasted butternut squash, cubed
- ¼ cup pomegranate seeds
Dressing
- 1 cup tahini
- ½ cup Lowfat Plain Kefir
- ¼ cup maple syrup
- 1 tbsp lemon juice
- ½ tsp each salt, garlic, black pepper to taste
Directions
- Preheat oven to 400F. Spray a pan with non-stick cooking spray.
- Place brussels sprouts and butternut squash onto baking sheet and roasted in oven for 30 minutes.
- To prepare dressing, combine tahini, kefir, maple syrup, and lemon juice and whisk well.
- In a large bowl, combine cooked quinoa, brussels sprouts, butternut squash, and dressing together.
- Serve & Enjoy!
