- ¼ whipped Farmer Cheese
- 2.5 cups whole grain oat flour (use gluten-free if needed)
- 1/2 cup Organic Whole Milk Vanilla Kefir
- 1/2 cup raw tahini (or you can sub cashew butter)
- ⅔ cup coconut sugar
- 2 eggs
- 1.5 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/4 tsp. sea salt
- ½ cup each, dark chocolate chips (we also mixed in some white chocolate chips)
- Garnish: flaked sea salt
Directions
- Preheat oven to 350F.
- Mix in the flour, coconut sugar, baking soda, and sea salt in a bowl. Sit aside. In another bowl, combine the tahini, vanilla, farmer cheese (whisk together with a fork or spoon until smooth before using), kefir, & eggs in a bowl until a smooth consistency. Use a mixer if needed. Fold into the flour mixture, then fold in the chocolate chips. Chill your dough for 15 minutes in the fridge or up to 2 hours to get it firm.
- Line a baking sheet with parchment paper.
- Roll each cookie into a ball, about 1-2 tbsp. in diameter, then place them on the pan with parchment paper and flatten with a fork.
- Sprinkle sea salt over cookies.
- Bake in the oven in the middle rack for 12-15 minutes. If you like your cookies crispy, bake until 15 minutes; if you prefer them gooey, go for 12 minutes.
