Base Recipe:
- 1 1/2 pounds of potatoes, shredded or pulsed in a food processor
- 1 small onion, shredded (or ½ medium)
- 1 large egg
- 2 tbsp. unseasoned breadcrumbs
- 1/4 tsp. salt
- 1/2 tsp. pepper
- ½ cup extra-virgin olive oil
Toppings:
- 1/2 cup Farmer Cheese
- 2-3 tbsp. raspberry jam
- 2-3 tbsp. strawberry jam
- 1 tsp. hot honey
- 1 tsp. red pepper flakes
- 1/2 avocado
- fresh berries
- cinnamon
Directions
- Shred the potatoes and onion using a box grater.
- Place the shredded potatoes in cheesecloth or paper towels and squeeze out excess moisture.
- In a large bowl, combine the shredded potatoes, shredded onion, egg, breadcrumbs, salt, and pepper. Mix well.
- Heat the olive oil in a 12-inch cast iron skillet over medium-high heat.
- Add the potato mixture to the pan and spread thin.
- Bake at 450 degrees for 20-30 minutes, or until the potatoes are browned.
- Allow the potatoes to cool. Slice them into cubes.
- Add Lifeway Farmer Cheese and other toppings to each cube. You can mix and match, add whatever you want!
