- 1 cup Lowfat Strawberry Kefir
- 1/2 cup Farmer Cheese
- 1 tsp. vanilla
- 1 cup fresh strawberries, sliced
- 2 tbsp. chia seeds (and/or hemp, flax seeds)
- 2/3 cup low sugar granola (cinnamon, vanilla, or almond honey flavor)
- drizzle of honey or maple syrup for topping, if desired
Directions
- In a bowl, mix Lifeway Kefir with Lifeway Farmer Cheese and vanilla. Whip with a hand mixer to make it fluffy (or you can mix all of it in a mini food processor if you don't have a hand mixer). Stir in the chia seeds, or you can mix them in with the mixer/food processor.
- Layer the whipped kefir and farmer cheese mixture with fresh strawberries in a parfait glass, alternating each with layers of the low sugar granola. Repeat 2-3 times until you have both parfaits set.
- Top with fresh strawberries and a drizzle of honey or maple syrup (if desired). Let these set in the fridge at least a few hours, preferably, which thickens up the whipped mixture and it chills everything together better. Enjoy!
- You can mix the kefir and farmer cheese with vanilla and chia seeds ahead and make it into a pudding-like texture, then make up any kind of parfait you want with any fresh berries you have on hand, like the strawberries we used. It will keep well if made ahead, just wait to layer the granola and berries in until a few hours before you eat it so they don't get soggy.
