Directions

  1. Add the Lifeway Kefir, 1/2 cup cooked beets (or beet powder), frozen strawberries, pomegranate arils, frozen banana, and vanilla to a high-speed blender. Blend until thick and creamy. Add extra ice if you want it thicker and chillier. Pour into two glasses and top with fresh pomegranate arils, pumpkin seeds, unsweetened coconut flakes, and/or fresh strawberries. Enjoy!

  • *To roast beets at home, line a baking pan with parchment paper. Place washed, peeled, chopped beets on the pan in quarters, about 1 inch thick. Roast at 375 degrees, Fahrenheit for 20-25 minutes until the beets come out soft and tender. They should have a caramelized look to them which makes them sweeter. Steamed/cooked beets can be found in the produce section if you prefer to buy them pre-cooked (such as Love Beets brand).
  • **You can find dried beet powder in health food stores (and some grocery stores) where the other dried fruit powders like acai and goji berries/goji berry powder are found. Some stores also stock it with mixed superfood powders.
