- 4 eggs
- 1 cup Organic Whole Milk Plain Kefir
- *or any of our whole milk plain varieties of kefir
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 cups cubed sourdough bread
- 1/4 cup diced yellow onion
- 1 tbsp. extra virgin olive oil
- 1 clove of garlic, minced
- 2 cups fresh baby spinach
- 3 slices of cooked bacon, sliced
- *or sub 3/4 cup sautéed mushrooms for a vegetarian option
- 1 cup cherry tomatoes
- 1/2 cup Farmer Cheese
Directions
- Whisk eggs, Lifeway Kefir, salt, and pepper in a bowl. Set aside.
- Place cubed bread in a 9 × 9 inch (or 1.5 quart) casserole dish.
- Sauté onion in oil until softened. Add garlic and spinach and cook for 1 minute. Spoon this on top of bread.
- Pour egg mixture in casserole dish. Add bacon or mushrooms and stir. Top with tomatoes and evenly distribute dollops of Lifeway Farmer Cheese on top. Cover and refrigerate for one hour or overnight.
- Preheat oven to 375°F and bake uncovered for 15 minutes. Cover with foil and bake another 15-20 minutes.
- Once it's fork tender and done, remove from the oven, let it cool in the pan around 10-15 minutes, then serve and enjoy!
