- 1 mini seedless watermelon
- 1 cup Organic Whole Milk Plain Kefir
- *or try our vanilla kefir for a sweeter option
- 2-3 tsp. raw honey or pure maple syrup
- optional: fresh mint to serve
Directions
- Cut the watermelon in half. Scoop out a large well in the center of one half (save the scooped-out fruit for snacking or another use). Wrap the hollowed half tightly in plastic wrap and freeze overnight.
- Once fully frozen, unwrap the watermelon. Pour Lifeway Organic Whole Milk Kefir into the well in the center.
- Using a sturdy spoon, scrape the frozen watermelon flesh into the kefir while stirring, gradually incorporating more watermelon as you go. Drizzle in honey or maple syrup to taste, continuing to scrape and stir until the mixture turns light pink and reaches a soft-serve, frozen consistency.
- Scoop into bowls, top with mint, and serve immediately.
