Directions

  1. In a high speed blender or food processor, add the farmer cheese, pumpkin, raw cashew butter, and vanilla protein powder. Process/blend until smooth; it should be very thick. Disperse the mixture into glass jars, then place in the fridge to set for 20-30 minutes while you make the chocolate topping..
  2. In a double boiler (or microwave), gently warm the dark chocolate chips and coconut oil on low heat just until they melt into a thick liquid, then stir together with as spoon (this is your chocolate drizzle for the topping). Once combined, sit aside away from the heat to cool slightly.
  3. Wait for 20 minutes for the pudding to set in the fridge if you haven't already, then top with melted chocolate from step 2. Refrigerate for one more hour. Keeps for 3-4 days in the fridge.
  4. Enjoy with drizzled cashew butter and fruit of your choice. We used raspberries for a pretty color and tart, sweet taste!
