Our Ghost Smoothie Bowls are made with nutrient-dense acaí berry, mixed berries, banana, and Lifeway Kefir and Farmer Cheese. The fruits pack this recipe with fiber, important vitamins and minerals, and antioxidants that fight inflammation while also supporting gut-health and immunity.

Lifeway Kefir makes the perfect base for smoothie bowls since it’s creamy, packed with probiotics, and a complete source of protein. Once blended with the fruit and a little all natural fruit juice, our kefir creates this delicious smoothie that we scoop into a bowl before being topped with little ghosts shaped from Lifeway Farmer Cheese.

To make the ghosts, just dollop some of our farmer cheese on top of the smoothie base  and shape it into ghosts by swirling it with a spoon, then make tiny eyes with a little bit of the reserved smoothie mixture. Or, you can use unsweetened cacao nibs or chocolate chips for the eyes to make things easier while also boosting the bowls with a touch of chocolate flavor. Before serving, we top our bowls with low-sugar granola, nuts/seeds, and more fruit.

Directions

  1. To make the smoothie, add Lifeway Kefir, banana slices, frozen mixed berries, chia or flax if using, and the juice to a high-speed blender or a food processor.
  2. Run some water until it's medium warm, and hold the acaí packets under the water for 10-15 seconds to soften before opening; this helps them blend better. Cut the tops off the packets, snap the packets in half, then place the acaí into the blender or food processor with the other ingredients.
  3. Blend/process everything until your smoothie mixture is thick and creamy. If you're using a blender, use a tamper if your machine has one. Reserve 1-2 tbsp. for the ghost eyes if you're not using chocolate chips or cacao nibs.
  4. Scoop the mixture into bowls. Take some farmer cheese, and dollop it on top of the bowls, using about 1-2 tbsp. each and shape it with a spoon into the ghosts. To make the eyes, add a tiny bit of the reserved smoothie mixture from step 3 to shape into the eyes, or you can use cacao nibs or chocolate chips instead.
  5. Top the bowls with anything you like, such as low sugar granola, fruit, coconut, or other nuts and/or seeds of choice. If you want your bowls sweeter, you can add a drizzle of honey on top. Enjoy!
