Honey Kefir Cheese Stuffed Sweet Potatoes

These Honey Kefir Cheese Stuffed Sweet Potatoes s are a simple way to combine together Lifeway Kefir and Lifeway Farmer Cheese perfectly for a holiday dish or appetizer idea. We used a local Chicago honey from Chicago Honey CO-OP as a way to embody the Thanksgiving spirit of support and gratitude for the local community. After all, the best memories are shared through good food!

Honey is Great for Healing

Honey contains antibacterial and anti-fungal properties, which can help support and improve the digestive system and boost immunity. Even more, it has antiseptic properties that can inhibit the growth of certain kinds of bacteria. Finally, it contains antimicrobial properties that can help fight bacteria that cause sore throats.

Superfood Sweet Potato

A one cup serving of sweet potato (cooked, with the skin on) contains:

  • More than four times the RDA of vitamin A (in the form of beta-carotene) – vitamin A is crucial for eye health, as well as a strong immune system and healthy bone development.
  • 35% of daily recommended amount vitamin C. Vitamin C not only supports immune health, it also helps the body make collagen, which is used throughout the body for tissue and ligament repair (and more!)
  • About half of the RDA of manganese – manganese helps regulate blood sugar and supports the proper function of the thyroid (which can help keep your weight in check).
  • A good dose of magnesium – magnesium supports heart and blood vessel health (as well as quite a few other things), but it also promotes relaxation and helps combat stress and anxiety.
  • They’re also a good source of potassium, vitamin D, vitamin B6, and biotin. Add that to the four grams of heart-healthy fiber and nearly three grams of protein.

Directions

  1. Pre-heat the oven to 400 degrees F.
  2. Prepare sweet potatoes by piercing each sweet potato with a fork a few times. Place them on a baking sheet and bake for 45 minutes to an hour.
  3. Once done, cut the sweet potatoes in half and let cool slightly.
  4. Using a fork, slightly separate the flesh from the skin of the potato. Mix the Kefir and Farmer Cheese in a small food processor, then even distribute the kefir farmer cheese mixture into the open sweet potatoes and add the other toppings among the sweet potatoes.
  5. Mix together and serve.
