These Honey Kefir Cheese Stuffed Sweet Potatoes s are a simple way to combine together Lifeway Kefir and Lifeway Farmer Cheese perfectly for a main dish or appetizer. We used a local Chicago honey from Chicago Honey CO-OP as a way to show support and gratitude for the local community. After all, the best memories are shared through good food!

Directions

  1. Pre-heat the oven to 400 degrees F.
  2. Prepare sweet potatoes by piercing each sweet potato with a fork a few times. Place them on a baking sheet and bake for 45 minutes to an hour.
  3. Once done, cut the sweet potatoes in half and let cool slightly.
  4. Using a fork, slightly separate the flesh from the skin of the potato. Mix the Kefir and Farmer Cheese in a small food processor, then even distribute the kefir farmer cheese mixture into the open sweet potatoes and add the other toppings among the sweet potatoes.
  5. Mix together and serve.
