- 1/2 cup old-fashioned (rolled) oats
- 1 tbsp. chia seeds
- 1 tbsp. hemp hearts
- pinch of salt (optional)
- 1 whole lemon, juiced
- lemon zest
- 1 cup Lemon Whole Milk Kefir
- 1/2 tbsp. maple syrup
- 3 egg whites, whipped, divided
- 1/2 tsp vanilla extract
- Blueberry Jam:
- 1/2 cup frozen blueberries, thawed
- 1 tsp. chia seeds
- lemon zest
- Combine oats, chia seeds, salt, lemon zest, hemp hearts, kefir, maple syrup and extract.
- Mix together 2 egg whites, and fold into mixture
- For the jam, mix together blueberries, chia seeds, and lemon zest until well combined
- In separate bowls, combine separate parts of the oats and jam mixture. Refrigerate for at least 1 hour or overnight.
- Top with 1 egg white, whipped, lemon zest, honey and enjoy.
