Lifeway Kefir and Lifeway Kefir Butter used in this recipe deliver a rich flavor and incredible texture, and they blend beautifully into baked goods of all kinds. Our probiotic kefir can be used just like buttermilk or other milk varieties, but it’s easier to digest since it’s lactose intolerant friendly. Our probiotic kefir butter is also a baked dessert must-have, as it contains 82% butterfat for an indulgent, decadent touch that’s available in three delicious varieties.

The Benefits of Cultured Dairy for Better Health:

Research continues to show the importance of eating healthy foods, including cultured dairy such as kefir, for better gut health, a strong immune system, and to support the microbiome. Fermented foods like kefir hold important value in this line of research due to the link between the gut-brain axis and overall health. Specifically, kefir has been shown to help diversify the microbiome, improve digestion, reduce inflammation, support healthier blood sugar levels, and improve satiety since the bioavailable protein it contains triggers the release of GLP-1.

Lifeway Kefir also contains a variety of nutrients that are vital for healthy bones and overall health: vitamin D3, K, calcium, and vitamin B12. Along with our kefir, we also offer our artisan-made Farmer Cheese, a creamy high-protein cheese made with live and active cultures to support a healthy microbiome that’s easy to spread and contains no added salt for optimal heart-health benefits.

Prep Time: 1 hour Servings: 6

Directions

  1. Preheat the oven to 350° F.
  2. To a large bowl add the flour, baking powder, baking soda, sugar, and salt, and whisk together to combine.
  3. Add the Lifeway Kefir Butter, and rub it into the flour using your fingers until the butter breaks down to resemble pea-sized crumbs. Pour in the Lifeway Kefir, and mix in with a spoon until the dough comes together. Set aside.
  4. Add the mixed berries, cornstarch or arrowroot powder, and maple syrup to a 2-quart capacity baking dish, and mix together until combined.
  5. With lightly greased hands, divide the dough into 6 equally-sized round pieces. Slightly flatten each piece of dough and place over the top of the mixed berries. Brush each dough round with a light layer of Lifeway Kefir, and a light sprinkle of sugar.
  6. Bake for 35-40 minutes, or until the top is golden and cooked through, and juices are bubbling. If the top seems to be browning too quickly, simply cover with foil and continue baking. Set aside to cool for 5 minutes before serving.
