- 2 cups all-purpose flour (use gluten-free if needed)
- 3 tbsp. coconut sugar
- 2 tbsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. fresh lemon zest
- 1 1/2 cups Lowfat Plain Kefir
- 1/2 cup slightly melted (not completely liquid, just melted) Salted Kefir Butter
- 1 cup fresh blueberries, washed and dried
- optional: 1-2 tsp. turbinado sugar or additional coconut sugar for sprinkling
Directions
- Heat oven to 425°F and set aside a 9x9" glass baking dish.
- To a large bowl, add the all-purpose flour, coconut sugar, baking powder, baking soda, and lemon zest; whisk until well combined.
- Pour the Lifeway Lowfat Plain Kefir into the flour mixture and stir with a large spoon or spatula until just combined. Add 1/4 cup of the slightly melted Lifeway Salted Kefir Butter, and mix until just incorporated. Gently fold in the blueberries.
- Pour the remaining 1/4 cup of the melted Lifeway Kefir Butter into the glass baking pan, then pour the batter directly over the butter. If using the additional coconut sugar or turbinado sugar for sprinkling on top, add it now.
- Bake for 25–30 minutes, or until cooked through. If the top begins to brown too quickly, loosely cover the pan with foil and continue baking until done or a fork comes out clean and the biscuits are a deep golden color.
- Remove from the oven and let rest for about 10-15 minutes before cutting into 9-12 square biscuits. Enjoy!
- These will keep for one week in the fridge, so cover with wrap and refrigerate if you have leftovers, then reheat before serving. Enjoy!
