- 1 cup Blueberries
- 2 peaches, diced
- 2 small cucumbers
- 1/2 cup crumbled Farmer Cheese
- 3-4 cups kale
- 3 tbsp lemon juice
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tbsp chopped basil
- salt and pepper to taste
Directions
- In jar with a lid, combine lemon juice, mustard, honey, olive oil, basil, salt and pepper. Shake until well combined.
- In a big bowl, combine kale, blueberries, peaches, cucumbers and Farmer Cheese. Drizzle vinaigrette over the salad and enjoy!
