Ingredients
For the Salad:
- 1 cup fresh blueberries
- 2 fresh peaches, diced
- 2 small cucumbers
- 1/2 cup crumbled Farmer Cheese
- 3-4 cups kale
For the Dressing:
- 3 tbsp. lemon juice
- 1 tbsp. dijon mustard
- 1 tbsp. honey
- 1 tbsp. extra-virgin olive oil
- 1 tbsp chopped basil
- salt and pepper to taste
Directions
- For the Salad: In a big bowl, combine kale, blueberries, peaches, cucumbers and Farmer Cheese. Set aside.
- Make the dressing: In jar with a lid, combine the dressing ingredients (the lemon juice, mustard, honey, olive oil, basil, salt and pepper). Shake until well combined; pour over the prepared salad and enjoy!
- You can make the salad and the dressing up to 2 days ahead, but don't combine them until a few hours before serving (or right before) to prevent the dressing from making the salad soggy. Both will store separately up to 2 days in the fridge if you want to meal prep with recipe.
