Prep Time: 4-6 hours (freeze time) Servings: 4-6Ingredients
- 2 cups Lowfat Peach Kefir
- *or try our Whole Milk Peach Kefir for a richer flavor
- 2 large frozen bananas (sliced if needed)
- 1 cup frozen peach slices
- 1 tsp. almond or vanila extract
- 1/2 cup low-sugar, gluten-free granola
- 1/2 cup fresh peaches, diced
- optional: fresh peach slices for serving
Directions
- Add the Lifeway Kefir, frozen peaches, frozen banana, and vanilla or almond extract to a blender, then blend until thick and creamy. Pour into a 2.5 ounce container, preferably one that's shallow or equal in length and height so it freezes evenly.
- Sprinkle the granola into the top, then press it into the mixture to swirl around. Do the same with the freshly diced peaches.
- Wrap the container in plastic or foil if it doesn't have a lid, then freeze until firm. Note, you may need to stir it after 2-3 hours to push the frozen sides down into the mixture so it freezes evenly, then place back in the freezer for another 2-3 hours until frozen mostly solid.
- Once it's frozen enough to scoop, remove from the freezer, scoop into bowls, and top with extra fresh peach slices, if desired. Enjoy!
