Directions

  1. Place the potatoes in a large pot and fill with enough cold water to cover the potatoes by a few inches. Add 1 tsp. salt to the pot, then bring to a boil over medium-high heat. Once boiling, add the ear of corn (if using fresh corn).
  2. Cook the corn for 4 minutes, then remove from the pot and set aside to cool. Continue to cook the potatoes for an additional 15-20 minutes, or until fork tender.
  3. Drain the potatoes, and set aside to cool. Remove the kernels from the corn cob, and set aside.
  4. To a food processor add Lifeway Farmer Cheese, Lifeway Kefir, mustard, lemon juice, dill, 1 tsp. flaky (kosher) salt, and black pepper. Process everything together on high until smooth and creamy.
  5. Once the potatoes have cooled to room temperature, cut each potato as needed to create bite-sized pieces. Add the potato pieces to a large bowl, followed by the diced red onion or shallots, corn kernels, and the farmer cheese/kefir mixture from step 4. Toss everything together until the potatoes are well-coated.
  6. Cover the salad and place in the fridge for 30 minutes. Prior to serving, transfer the salad to a serving bowl and garnish with fresh dill. Enjoy!
