- 8 large eggs
- 1 cup egg whites
- 3/4 cup to 1 cup Organic Whole Milk Plain Kefir
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
- 1 tsp. Italian seasoning
- 1/2 tsp. garlic powder
- 2 cups diced vegetables: a mixture of onion, tomatoes, pepper, mushrooms
- 1 1/4 cup Farmer Cheese
- 2 tsp. smoked paprika
- 1-2 tsp. Tobasco or hot sauce of choice
- fresh, chopped parsley and fresh, chopped chives/scallions for topping
Directions
- Preheat oven to 350°F. Spray a 9x13" sheet pan with cooking spray or lightly grease nonstick spray or coconut oil.
- In a blender or food processor, combine the eggs, egg whites, kefir, salt, pepper, Italian seasoning and garlic powder. Blend for 30–60 seconds, or until mixture is smooth.
- Transfer the kefir egg mixture from blender into the pan. Add in your diced veggies. Whip Lifeway Farmer Cheese in a food processor, then add this into the veggies and egg/kefir mixture. With a large wooden spoon, mix the batter so the veggies and cheese evenly disperse. Sprinkle in the smoked paprika and drizzle in the Tobasco or hot sauce. Add extra dollops of farmer cheese on top, if desired.
- Bake for 30 minutes, or until eggs are set in the center and lightly golden on top. Top with fresh scallions/chives and parsley.
- Let the egg bake cool, and then cut into square/ pieces to serve.
