7 Warm Breakfasts for Cool Mornings

Is the cold weather disrupting your breakfast routine? We don’t blame you! We always look forward to sipping on our favorite cold kefir smoothie to start our day, but sometimes we crave something warm and comforting. Not willing to give up our daily dose of protein and probiotics, we turn to the Lifeway Kitchen for these sweet and savory warm breakfasts options.

Savory Veggie Waffles

We’ve yet to meet someone who doesn’t enjoy a waffle and we know this one won’t disappoint. While traditional waffles are loaded with sugar and served with thick syrups and jams, we make ours savory using our favorite herbs, spices, vegetables, and, of course, kefir. Sauté your vegetables before hand to cut down on moisture and bitterness, then set up a waffle bar, letting everyone pick out their own fillings. We use our trusted Simple Mills Pancake and Waffle Mix with our Whole Milk Plain Kefir in the mix, and top it with our Farmer Cheese or Herbed Strained Kefir.

Kefir Apple Pancakes

There are endless pancake recipes out there, but we love this one because it’s full of three of our favorite superfoods: apples, cinnamon and kefir! Warm, soft and supercharged with fiber, these pancakes are a kid favorite that adults can enjoy without guilt. Keep them in the freezer and pop them in your toaster for a quick breakfast when you’re on the run.

Cranberry Orange Kefir Scones

If you have a little more time, few things feel as special as a dense scone and a warm glass of tea to start your day. This recipe is a bit more labor intensive, so save it for mornings where you have more time, but for a pastry that’s made with  kefir, this can’t be beat! Feel free to cut and shape the dough to fit your portion desires, and leave unbaked dough in the freezer for up to a month for grab-and-bake goodness.

Probiotic Breakfast Casserole

This grain-free, gluten-free breakfast casserole is one of our favorite ways to feed a hungry crowd, but the leftovers (if there are any!) make a great quick breakfast on a busy morning. Once again using our favorite Simple Mills Pancake and Waffle Mix (made with almond flour for healthy fats), we add our creamy Farmer Cheese, dark leafy greens and whatever vegetables we have on hand. Served with a cool glass of kefir, it’s the ultimate way to start your day.

Cinnamon Apple Kefir Oatmeal

A tried and true favorite containing yet again our favorite fall foods (apples and cinnamon), oatmeal is the ultimate comfort food. This recipe is one of our favorites because it can also be prepared the night before to save time. To do so, simply rinse your oats and add them to a jar with the water (reduce it by ½ cup) and kefir. Seal the jar and give it a good shake before putting it in the fridge overnight. In the morning, simply warm the now soaked oats in the microwave or on the stove and stir in the spices, pecans and apple slices. Soaking oats in an acidic medium (our kefir!) makes them easier to digest. Top your warm oats with an extra splash of kefir – the probiotics won’t survive high heat.

Tomato Avocado Farmer Cheese Toast

Tomatoes are out of season, but if you’re lucky enough to live in an area where avocados are available (they’re grown year round now), slather a thick slice of hearty whole-grain (or better yet, fresh sourdough) bread with a layer of Farmer Cheese and avocado. Top with salt, pepper and your favorite herbs. Make it more hearty by laying a warm runny egg on top for a protein-packed breakfast that will satisfy all of your cravings.

Berry Kefir Breakfast Porridge

Similar to our Cinnamon Apple Kefir Oatmeal, this porridge centers on thick rolled oats and creamy kefir, but gets an extra boost of goodness from chia seeds and flax seeds and is cooked without kefir (it’s poured over instead). We like to think of this as “upgraded” oatmeal, as it contains more healthy fats and soluble fiber than traditional oatmeal, but at a higher calorie cost. This is our go-to recipe before a long day of fall hiking or camping.
