- 1 head Cauliflower
- 1 large sweet potatoes
- 3 tsp olive oil, divided
- 1 tsp curry powder
- 1/2 tsp ground turmeric
- 1 tsp garlic powder, divided
- 1/4 tsp red cayenne pepper
- 1 tsp dried parsley
- 1 cup Farmer Cheese
- salt and pepper to taste
- Top with green onion, chopped cranberries, cilantro, and parsley.
Directions
- Chop head of cauliflower up into smaller pieces of florets.
- Slice sweet potatoes vertically to look like pieces of toast. Drizzle some olive oil and sprinkle salt and pepper over them.
- In a 350 degree preheated oven, place the sweet potato slices and roast for 30 minutes, or until softened.
- Toss cauliflower in olive oil, curry powder, turmeric, 1/2 tsp garlic powder, red cayenne pepper, salt and pepper. Place on a baking sheet and put in the preheated oven for 20 minutes or until the cauliflower is softened.
- Mix together farmer cheese with 1/2 tsp garlic powder and dried parsley.
- Once everything is roasted, slather farmer cheese mixture on the sweet potato slices, layer roasted cauliflower, and top with green onion, chopped cranberries, cilantro, and parsley. Enjoy!
