Directions

  1. Chop head of cauliflower up into smaller pieces of florets.
  2. Slice sweet potatoes vertically to look like pieces of toast. Drizzle some olive oil and sprinkle salt and pepper over them.
  3. In a 350 degree preheated oven, place the sweet potato slices and roast for 30 minutes, or until softened.
  4. Toss cauliflower in olive oil, curry powder, turmeric, 1/2 tsp garlic powder, red cayenne pepper, salt and pepper. Place on a baking sheet and put in the preheated oven for 20 minutes or until the cauliflower is softened.
  5. Mix together farmer cheese with 1/2 tsp garlic powder and dried parsley.
  6. Once everything is roasted, slather farmer cheese mixture on the sweet potato slices, layer roasted cauliflower, and top with green onion, chopped cranberries, cilantro, and parsley. Enjoy!
