Directions

  1. Cut eggplant into cubes, toss with olive oil, salt/pepper and roast for 15 minutes at 350 degrees, or until softened.
  2. Toss all ingredients for the salad.
  3. Combine all ingredients for the hummus in a mini food processor or blender and blend until creamy.
  4. Cut open pita pocket, layer in hummus, salad, eggplant, artichoke hearts, and top with farmer cheese crumbles. Enjoy!
