- 3⅔ cup all-purpose flour (spooned & leveled)
- 2 tbsp. baking powder
- 1/4 tsp. baking soda
- 1 tbsp. cane sugar
- 1 cup Lifeway Kefir Butter*
- 1 cup cold Organic Whole Milk Plain Kefir
- or any of our whole milk plain kefir varieties
- optional toppings: jam or fruit butter, raw honey, extra kefir butter
Directions
- Line a large baking sheet with parchment paper and set aside. Preheat the oven to 425 degrees.
- In a large bowl, add the flour, baking powder, baking soda, and sugar together. Toss with a fork or spoon to combine thoroughly.
- Add in pieces of the cold kefir butter a little at a time, then work with clean hands to form a dough until you have coarse crumbs.
- Slowly pour in the Lifeway Kefir, then use a spatula to stir everything together, just until comcbined. Do not overmix to prevent the dough from becoming tough.
- Lightly flour a clean surface, then place the dough on the floured surface and work with your hands and knead it, then flatten out until it's a 1" thick in height.
- Using a bench scraper or large knife, cut the dough in half, then stack the halves on top of one another.
- Gather any loose bits, patting them inside the dough, flatten the dough with your hands, then repeat the cutting process again, stack the halves on one another, and repeat once more.
- Roll out the dough into a rectangle about 3/4" thick, and evenly cut 8-10 biscuits.
- Place the biscuits on your parchment lined baking pan, and pop them in the freezer for 20 minutes to firm up.
- Brush the tops with extra Lifeway Kefir, then bake for 20-25 minutes until the tops are just golden brown and the biscuits have puffed up.
- Remove, let cool for 5 minutes, then serve with extra kefir butter, jam or fruit preserves, or raw honey if using. Enjoy!
