- 2 lbs. yellow, red, or white potatoes (peel if desired)
- 2/3 cup Farmer Cheese
- 1/4 cup grated Parmesan cheese
- 3 tbsp. unsalted butter
- 1 tbsp. fresh parsley (finely chopped)
- salt and pepper
- 1-2 crushed garlic cloves (depending on how much garlic you like)
- 1 tbsp. chopped chives
Directions
- Boil potatoes with salted water until fork tender, the drain when done. Transfer them to a large bowl, and mix & mash together all the ingredients above together.
- Top with butter, salt, and extra fresh herbs, if desired.
