- 2 lbs yellow, red, or white potatoes (peel if desired)
- 1/4 cup grated parmesan cheese
- 3 tbsp unsalted butter
- 1 tbsp fresh parsley (finely chopped)
- salt and pepper
- 1 crushed garlic clove
- 1 tbsp chopped chives
Directions
- Boil potatoes with salted water, drain when done. In a large bowl, mix & mash together all the ingredients above together.
- Top with butter, salt, and extra fresh herbs.
