Directions

  1. In a large Dutch oven over medium heat, add in oil from sun-dried tomato jar. Add in sun-dried tomatoes, minced garlic, fresh thyme, oregano, rosemary and salt/pepper. Cook until tomatoes are softened. Add i n balsamic vinegar and cook another minute. Add in vegetable stock and bring to a simmer for 5 minutes.
  2. Cook the pasta to package directions.
  3. Stir in the cream to the vegetable stock mix. Transfer to a blender, add in the 1/4 cup farmer cheese and blend until smooth and creamy.
  4. Drain the pasta and add it to the dutch oven along with the blended sauce. Add in grated parmesan cheese and stir until all warmed up over low heat.
  5. Plate the pasta with chunks of Farmer Cheese, olive oil, salt/pepper, parsley, and more parmesan cheese. Enjoy!
