For the Bowl:
- 1 cup of any brand of cauliflower rice
- 1 handful of chopped kale
- 1 cup ground beef or sausage
- 1 large egg
- 1 sliced avocado
- 1/2 cup crumbled Farmer Cheese
- scallions, chopped
- Salt and pepper to taste
- 1/2 tsp cayenne pepper
For the Toppings:
- 1/4 cup fresh salsa
- black pepper
- red pepper flakes (chili flakes) to taste
- 1/4 cup Lowfat Plain Kefir
Directions
- Cook the cauliflower rice according to instructions.
- Over medium heat in a medium-large skillet, cook down the kale with 1 tbsp of water, salt and pepper. It should only take about 5 minutes, remove and set aside.
- Add the same pan, add in the ground beef (or sausage), chop up until you get small crumbles and toss around until it's cooked thoroughly (remove any grease with a paper towel by dabbing around the cooked beef). Remove beef and set aside.
- Take a new skillet, spray with nonstick spray, then crack an egg in the pan, season with salt, pepper, and cayenne pepper. Cover and cook for 3-5 minutes, or until desired doneness.
- Put it all together: In a bowl, add in cooked cauliflower rice, cooked kale, chopped cooked beef, cooked egg, sliced avocado, crumbled Lifeway Farmer Cheese, chopped scallions, and top it all off with 1/4 cup fresh salsa, red pepper flakes, black pepper, then drizzle with 1/4 cup Lowfat Plain Lifeway Kefir. Dig in!
- Feel free to add your favorite hot sauce if you want it spicier. You can also pre-blend the salsa, red pepper/chili flakes, black pepper, and Lifeway Kefir before drizzling on top to make a sauce-like topping/dressing if preferred instead of using them separately.
