- 4 garlic cloves
- 1 zucchini, chopped
- 1 tbsp. olive oil
- pinch of salt
- 1 tbsp, olive oil
- 1 onion, chopped
- 4 plum tomatoes, chopped
- 3 cups vegetable stock
- 1 tsp Italian mixed herbs
- 1 cup Organic Whole Milk Plain Kefir
- 2 tbsp. tomato paste
- 1/2 cup Farmer Cheese
- 2 tbsp. maple syrup
- 1 tsp. crushed red pepper
Directions
- Preheat the oven to 350F.
- Add zucchini onto a baking tray, drizzle with olive oil and a pinch of salt and put it in the oven together with the garlic for about 25 minutes.
- Heat 1 tbsp. of olive oil in a pan over medium heat and add onion. Cook until soft and translucent.
- Add the tomatoes together with the vegetable stock and simmer for 10 minutes.
- Remove the skin from the garlic. Place it together with all the other ingredients from above into a blender or food processor and blend until smooth and add back your pot over medium heat.
- Add salt, maple syrup, tomato paste, mixed herbs, crushed red pepper, and kefir until desired taste and consistency.
- Top farmer cheese, and with an extra drizzle of kefir, extra chili flakes, and fresh basil.
