- 1 cup Farmer Cheese
- 1 cup pesto
- 1 cup chopped artichoke heart
- 1 leek, shredded
- 1 cup pine nuts
- 1/2 cup Parmesan cheese
- 2 tbsp olive oil
- salt/pepper to taste
- flatbread of choice
- handful of fresh spinach
- 3-4 slices of broccolini (or broccoli florets)
- top with diced green onions
