For the Latkes:
- 1/4 cup avocado oil
- 3 large russet potatoes
- 1 medium yellow onion
- 1 egg
- 1/4 cup all-purpose flour
- dash each of salt and pepper
For the Garlic Chive Kefir Dip:
- 1/2 cup Whole Milk Greek Style Plain Kefir
- or Organic Whole Milk Plain Kefir
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. salt
- dash of black pepper
- 1-2 tsp. fresh chives
Directions
- Make the Latkes: Grate the potatoes and onion. Press potatoes and onion shreds with a towel or cheesecloth to remove all excess liquid.
- Put the potato onion mixture into a large bowl, then add eggs, flour, salt, and pepper. Mix well. Heat avocado oil to medium-high heat in a large skillet.
- Using a large spoon, place potatoes in oil, and flatten with the back of the spoon. Cook for about 3-4 minutes on each side. Once golden and crispy, put cooked latkes on a wire rack to cool just until slightly warm.
- Prepare the Garlic Chive Kefir Dip: Add Lifeway Kefir and seasonings to a small bowl, and mix well or whisk together.
- Arrange the latkes on large serving platter with the dip, and enjoy!
