Directions

  1. Preheat oven to 375 degrees, Fahrenheit and line a standard 12-cup muffin pan with paper liners.
  2. For the Muffins: In a large bowl, mix together the oat flour, baking soda, cinnamon, pumpkin pie spice, and salt until well combined. Set aside.
  3. In a medium bowl, whisk the coconut sugar, pumpkin purée, applesauce, and Lifeway Pumpkin Spice Kefir until well combined.
  4. Pour the wet ingredients into the dry ingredients, and fold everything together gently until combined.
  5. Fill paper muffin liners until 3/4 full.
  6. For the Streusel topping: Whisking flour, oats, coconut sugar, and pumpkin pie spice until well combined. Mix in the melted butter until crumbs form. Set aside.
  7. Bake the muffins for 18-20 minutes, or until you can pull out a clean toothpick from the center of a muffin.
  8. Allow the muffins to cool completely in the pan before removing. Then remove from the pan, place on a cool plate or serving dish.
  9. Mix together all probiotic frosting ingredients until smooth. Lightly drizzle the muffins with the probiotic frosting, and sprinkle on the streusel topping. Keep leftovers in the fridge if you have any for up to a week.
