- 2 pieces sourdough or artisan bread (or gluten-free alternative)
- 2/3 cup Farmer Cheese
- 1 cup fresh watermelon, chopped into 1 inch pieces
- 1/2 cup grape tomatoes, halved
- 1 clove of garlic, finely minced
- 2 tsp. balsamic vinegar
- 1 tbsp. extra-virgin olive oil
- 1/4 cup fresh basil, finely chopped
- pinch of flaky salt
- freshly cracked black pepper
Directions
- Toast the bread to your liking, and while it's toasting, prepare the rest of the ingredients.
- In a medium bowl, add the watermelon, grape tomatoes, garlic, balsamic vinegar, olive oil, and basil, then mix together well.
- Once the bread if finished toasting, spread 1/3 cup Lifeway Farmer Cheese on each piece, then add the watermelon tomato mixture from step 2 evenly amongst both pieces.
- Sprinkle salt and black pepper on each piece, then enjoy!
