We shared our Watermelon Frozen Kefir with you for a more gut-healthy version of the viral watermelon ice cream trend, and now we’re expanding our love for frozen fruit ice cream recipes with this Pineapple Coconut Frozen Kefir made with Lifeway Kefir.

Unlike traditional ice cream, frozen kefir is more gut-friendly due the live and active probiotics found in Lifeway Kefir. Our kefir is also a high-quality source of complete protein, calcium, vitamin D, vitamin B12, and potassium. Did we mention it’s even suitable for those with lactose intolerance? We bet ice cream can’t beat that!
Pineapple used in this recipe is an excellent fruit for gut health since it contains the enzyme bromelain that helps digest protein; it also combats inflammation. Additionally, this tropical fruit is packed with vitamin C for immune system support, potassium for electrolyte balance, and it’s a top source of manganese, a mineral that supports a healthy metabolism.

Here in this Pineapple Coconut Frozen Kefir, we paired sweet, juicy pineapple with our delicious Lowfat Coconut Kefir for an exotic tropical twist on summer’s easiest frozen fruit dessert.
To make this healthy recipe, all you’ll need to do is scoop out some of the pineapple flesh after cutting it in half lengthwise (reserve and use the flesh in a smoothie or popsicles). This creates a well in the middle, which is where you’ll pour Lifeway Kefir inside once the fruit is frozen. After the hollowed fruit takes a trip to the freezer for a bit, remove it, pour in Lifeway Kefir, and scrape down the insides of the fruit where the kefir is to create a frosted, creamy, quick frozen kefir recipe.

We scooped our frozen kefir out into glasses before garnishing and serving, but you can also eat it straight out of the pineapple shell if you want to. There are no rules here, and you can experiment with other fruits and other Lifeway Kefir flavors.

- 1 large pineapple
- 1 - 1 1/2 cups Lowfat Coconut Kefir
- *or try our Organic Whole Milk Coconut Honey Kefir for a richer flavor
- Garnish: unsweetened coconut flakes or shreds (we used toasted)
Directions
- Slice the pineapple in half lengthwise, and use a paring knife to cut out the core on both halves. This will create an oval-shaped well in the middle of the inside of the fruit. Tightly cover the cut side of each pineapple half with plastic wrap. Freeze at least 6 hours, but overnight is best.
- Remove from the freezer, and add 1/2 cup of the Lifeway Kefir to the hollowed out well. Use a spoon to scrape at the fruit and mix it into the Lifeway Kefir until a thick and creamy frozen kefir has formed. Add more Lifeway Kefir if needed, up to 1 1/2 cups.
- Scoop into bowls and top with unsweetened coconut flakes or shreds. Enjoy!
